Rice pudding with strawberry and pistachio coulis

ingredients for 4 persons
120 g Grandi Riso short-grain rice
1 knob of butter
500 ml milk
3 – 4 scoops of sugar or honey
600 g strawberries
40 g pistachios
icing sugar
1 sprig of mint

1 Generously grease 4 aluminium pudding moulds. Pour the milk into a pan with high sides. Bring the milk to the point of boiling, pour the rice in slowly sprinkling and cook it for about 15 minutes. Sweeten the rice to your liking with the sugar or honey.

2 Divide the rice between the moulds making sure to push it to the bottom and edges well, level off the surfaces and put to one side.

3 Wash and dry the strawberries, and blend 400 g of them with one or 2 teaspoons of icing sugar. Pass the mixture through a fi ne sieve, cut the remaining strawberries into segments and chop the pistachios.

4Place the moulds for 10-15 seconds into the boiling water and turn the puddings out onto 4 small plates. Drizzle the coulis and strawberry pieces around the edge. Sprinkle with the pistachios and icing sugar, decorate with small mint leaves and serve.
